Simple Lemon & Garlic Asparagus

Looking for a quick and easy side dish, follow this simple recipe for asparagus with a lemon and garlic twist.

Ingredients

For the asparagus

asparagus
cooking oil of choice
salt and pepper to taste
1-2 tablespoons of butter
1 lemon

Preparation

  1. Trim and cut the asparagus into 2.5 – 5 cm lengths.
  2. Parboil and shock them. Do this by putting them in boiling water for 1 minute. After removing them from the boiling water, immediately put them in ice water.
  3. Preheat a grill pan or Char-Broil® Porcelain Grill Wok. While the grill heats, toss the asparagus in a bowl with some cooking oil and season with salt and pepper.
    HOT TIP – Avoid using extra virgin olive oil as it will burn.
  4. Add the asparagus to the grill pan and cook for 10 minutes or so. Toss them every few minutes until the asparagus start to develop dark spots, but before shriveling.
  5. While the asparagus cook, melt butter in a pan on the side burner on low heat. Add minced garlic. Be careful not to to fry the garlic, only sweat it.
  6. Once the asparagus are done, put them on a serving tray, top with the butter and garlic. Then add some freshly grated lemon zest and a small squeeze of lemon juice.
