Chili-stuffed bacon-wrapped jalapeno poppers

Loaded with chilli and wrapped in bacon, these jalapeño poppers are the ultimate pass-around party food.

Ingredients

For The Poppers

10 jalapeño peppers, sliced in half
½ cup cheddar cheese, shredded
20 slices bacon

For The Chilli

2 tablespoons butter
½ onion, diced
0.5 kg ground beef
1 tablespoon chilli powder
½ teaspoon cumin
1 teaspoon lime juice
1 clove garlic, minced
400 grams diced tomatoes
¼ cup BBQ sauce
½ cup beer
salt and pepper to taste

Preparation

  1. Preheat your grill for indirect heat.
  2. In a preheated cast iron skillet or saucepan, sauté the onions until golden brown. Add the ground beef, chilli powder, cumin, oregano, minced garlic, salt and pepper, then fully brown the ground beef over medium-high heat. Add the remaining chilli ingredients and simmer for 10 more minutes. Then, remove from heat.
  3. Cut each jalapeño in half lengthwise and core the interior using a spoon. Fill each half jalapeño with chilli, top with shredded cheddar cheese and wrap with a slice of bacon.
  4. Place the jalapeño poppers on the indirect side of the grill and close the lid. Cook for 45 minutes at 275°F.
  5. Remove the poppers from the grill and serve.
