Mango Salsa Veggie Burger

Ingredients

For the Mango Salsa

2 mangoes, diced
1 avocado, diced
½ red onion, diced
¼ cup coriander, diced
½ jalapeño, diced
1 lime, juiced
salt & pepper, to taste

For the Blackened Seasoning

2 teaspoons cayenne pepper
2 teaspoons paprika
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon oregano
1 teaspoon salt
1 teaspoon black pepper

For the Burgers

4 Beyond Meat® burger patties
4 sandwich buns
1 bundle butter lettuce
3 tablespoons blackened seasoning
2 tablespoons butter

Preparation

  1. Preheat grill to 230°C.
  2. Mix diced mangoes, avocado, red onion, cilantro and jalapeño together in a medium-size bowl. Once mixed, stir in lime juice and add salt & pepper.
  3. In a small bowl, combine cayenne pepper, paprika, onion powder, garlic powder, oregano, salt & pepper.
  4. Coat both sides of veggie burger patties with blackened seasoning.
  5. Place seasoned patties on the grill and cook for 2 to 3 minutes per side. Add buttered buns to toast for the last minute.
  6. Assemble your veggie burger with lettuce on the bottom bun. Add burger patty and serve with a side of mango salsa.
