Pork Tenderloin Sliders with BBQ Sauce

Ingredients

BBQ Sauce

1 cup ketchup
½ cup dark brown sugar
2 tablespoons apple cider vinegar
1½ tablespoons Worcestershire sauce
1 teaspoon BBQ rub or chile powder
¾ teaspoon salt
½ teaspoon ground black pepper
¼ teaspoon dried minced garlic
¼ teaspoon dried minced onion
2 tablespoons apple jelly
1 tablespoon apple pie flavoured moonshine, optional, or substitute apple juice or Dr. Pepper
½ teaspoon apple pie sauce

Dry Rub

1½ teaspoons salt
1½ teaspoons garlic pepper seasoning
¼ teaspoon apple pie sauce

Tenderloins and Rolls

2 pork tenderloins
butter substitute spray
16 sweet hawaiian rolls

Preparation

  1. Preheat your grill to medium heat (170-200 degrees Celsius).
  2. Place a small saucepan on medium heat and stir together the barbecue sauce ingredients. Bring to a simmer for 5 minutes and then allow to cool.
    HOT TIP – Side burners can be pretty powerful so be sure to use a heavy bottomed pan when you are using the burner.
  3. Mix together the dry rub ingredients.
  4. Trim the silver skin from your tenderloins, fold the thin end under the tenderloin and then tie it in place with butcher’s string.     HOT TIP – Don’t worry about any visible fat, but you need to remove the silver skin. It won’t render and will get tough and chewy. One end of pork tenderloins is much thinner than the other. That will overcook unless you tuck it under the roast and tie it back to make it thicker.
  5. Season the tenderloins with the rub.
  6. Spritz the tenderloins with the butter substitute spray and place on the grill. Cook until they reach an internal temperature of 140 degrees, turning every 3-4 minutes to form a nice crust.What your pork tenderloin should look like after cooking
  7. Remove the pork from the grill and allow to rest for 5 minutes.
  8. Spritz the insides of the rolls and toast on the grill for about 20-30 seconds, then remove.
  9. Slice the tenderloin, place on toasted buns, drizzle with sauce and serve.
