Pineapple Bourbon Glazed Ham

Glazed in pineapple, brown sugar and your favourite bourbon, this Pineapple Bourbon Glazed Ham will take your next holiday feast on a tropical adventure. Delicious hot or cold, serve this ham as your main dish and don’t forget to set some aside for sandwiches.


For the Ham

3.6-4.5 kg spiral cut ham
3 tablespoons coarse ground Dijon mustard
1 sprig fresh rosemary, chopped
½ cup pineapple juice
1 cup brown sugar
½ cup bourbon


  1. Preheat the The Big Easy® Oil-less Fryer to medium heat (around 170°C).
  2. In a small bowl, mix Dijon mustard and chopped rosemary. Liberally coat the ham with the mixture.
  3. Place the ham in The Big Easy basket and lower into the fryer. Cover with lid and let cook for 15 minutes.
  4. In a saucepan, combine pineapple juice, brown sugar and bourbon. Bring to a simmer and set aside.
  5. Remove basket and add a few coats of glaze to the ham. Place back into The Big Easy fryer, making sure the lid remains off.
  6. Continue cooking for 15 to 20 minutes per pound until the ham reaches an internal temperature of 60°C.
  7. Remove the basket and add a final coating of glaze while the ham rests.
