Basic Beef Mop Sauce

Though it may not sound like fun, mopping in grilling is actually a wonderful way to enhance flavour to meats. It’s particularly beneficial to use with tougher cuts of meat that need long cooking over low heat.

A mop sauce is a thin liquid, often based on tomato juice, vinegar, apple cider, beer or a combination of these ingredients, that’s “mopped” onto food numerous times during cooking. Moisten the meat with mop sauce every 20 minutes or so while its over the coals. Use a long-handled basting brush that will stand up to the heat of the grill and be sure to close the grill’s lid immediately after mopping.

Ingredients

2 cups beef stock
¾ cup Worcestershire sauce
⅓ cup canola oil
2 teaspoons salt
2 teaspoons onion powder
1½ teaspoons smoked paprika
1½ teaspoons dry mustard
1½ teaspoons black pepper
1½ teaspoons cayenne
1 teaspoon hot sauce
1 teaspoon garlic powder

Preparation

  1. Mix all ingredients together thoroughly.
  2. Store in an airtight container.
  3. Use within one week.
