Smokin' BBQ Ribs

Ingredients

Ribs

2 racks pork baby back ribs

Dry Rub

1 tablespoon salt
2 teaspoons black pepper
1 teaspoon cayenne pepper
2 tablespoons chilli powder
1 tablespoon garlic powder
1 tablespoon smoked paprika

BBQ Sauce

4 tablespoons unsalted butter
4 green onions, minced
2 tablespoons garlic powder
¼ cup chilli powder
1 tablespoon black pepper
6 cups ketchup
⅓ cup light brown sugar, firmly-packed
½ cup granulated sugar
1 cup apple cider vinegar
¾ cup beer
⅓ cup dry red wine
2 teaspoons Mexican oregano
1 teaspoon cayenne pepper
½ cup Worcestershire sauce
2 tablespoons Tabasco sauce

Preparation

  1. Only use outer burners to pre-heat grill to 120°C
  2. Pour all BBQ Sauce ingredients into saucepan, bring to a boil and simmer for 20 minutes.
  3. In a small bowl, mix all Dry Rub ingredients.
  4. Cut rib racks in half so you have 4 racks. Sprinkle front and back of ribs with Dry Rub and pat into place. Place ribs upright in the rib rack.
  5. Place rib rack on grill over indirect heat, close lid and cook at 120°C.
    HOT TIP – Keep an eye on the temperature to make sure it stays around 120°C.
  6. Liberally baste with BBQ Sauce every 30 minutes for 2.5 to 3 hours, or until ribs reach desired doneness.
  7. Remove ribs from grill when finished and baste one final time with BBQ Sauce.
